Good Morning!  Today I am cooking a meal for our good friends, Dale and Lisa Wienke.  I was originally planning to make a lovely Thai curry but neither of them are fans of curry, so I am taking a different turn and going for comfort food.  I am making a Special K Loaf which I have modified to reduce the fat, buttered carrots, baked potatoes, salad and a new recipe I'm trying from CooksIllustrated.com, Peach Cobbler.   Happy Sabbath!

Everyone loves a salad!
The original recipe for the Special K loaf called for one stick of butter!  I just took it out
completely and it still tasted great.

My mom used to make carrots this way at Thanksgiving and Christmas.  Always brings back good memories.

This was a simple way to prepare peaches from Bush's in Elmira, OR.  I love CooksIllustrated.com!


We always enjoy having our friends over for dinner!
